Theresa Scully • Shelf Life is based on 2 Factors- Organoleptic ( taste, dryness,and appearance , visual appearance of mould ) and Microbiological - Ready to eat products should be lysteria free/ 25g ,Salmonella free , Coliform Free , test for moulds (less than 5), Cream based cakes should be tested for Enterobacter , Staph aureus.
Conduct tests by subjecting Product to maximum conditions - ie mimic customer abuse to get optimum results .

This must be based on risk and must include relevant test factors e.g. for food products microbiological and sensory analysis, pH and aw. Consideration should also be given on the external environment where the product will be stored and packed, and the materials used in cake production. The test should be conducted per cake variety.

2- water activity
3-enzyme activity
4-free fatty acid
5-type and quality of the raw materials used (mainly the fat types and quality)
6- baking conditions, sanitary conditions,packaging, storage conditions
7-every cake factory has to determine the shelf-life of the cakes by itself, according to its own conditions and criterions of shelf-life

Claudine Watson • FSA issues statement on bute in horsemeat
The Agency has issued a statement on bute in horsemeat. Horses that have been treated with the drug phenylbutazone or ‘bute’ are not allowed to enter the food chain.
The Food Standards Agency (FSA) carries out checks in slaughterhouses to ensure that horses presented for slaughter are fit for human consumption, in the same way as they do for other animals such as sheep and cattle. The FSA also carries out regular enhanced sampling and testing for phenylbutazone in meat from horses slaughtered in the UK.
In 2012, the FSA identified five cases where horses returned non-compliant results. None of the meat had been placed for sale on the UK market. Where the meat had been exported to other countries, the relevant food safety authorities were informed.
During the recent horsemeat incident the Food Safety Authority of Ireland checked for the presence of phenylbutazone and the samples came back negative.

Atef Idriss • I think this is an unacceptable violation of consumer rights.If food safety authorities have not cracked down on the whole supply chain (with producers, suppliers and retailers, to name only the main culprits)Then there is something totally wrong .
I wonder if EU value chains , and related standards of identity , and horizontal specifications could not allow such major violations or adulterations ,as suggested by Mr Whitehead !?

Atef Idriss ∙ I agree with Fred, and with my limited experience with UK retailers I believe they have a long way to go in addressing preventive paradigms at the private sector level.
At the macro level, the FDA/FSMA ( and not the UK FSA )is such a tool , and EU & UK food safety scientists and practitioners should be encouraged to address local and regional platforms on harmonization of testing and accreditation ...

Victor Goodridge ∙ Atef, I apologise for the personalisation of this argument. My intention was to do the same as you - bring the discussion back to an examination of the real problem. The event was not one of food safety per se but one of financial fraud. Horse and pig meat are not inherently unsafe, but they were not what the customers thought they were buying.

It is our profession that is at stake and food scientists need to call food fraud by the name!

افتتح ورشة عن "استراتيجية الأمنين الحيوي والوقائي":
الحاج حسن: تحديات كثيرة يفرضها التطور العمراني

لفت وزير الزراعة حسين الحاج حسن الى ان ثمة الكثير "من التحديات التي يفرضها التطور العمراني وازدياد السكان وتأثيرهما على البيئة والتطور الاقتصادي والتجارة الدولية وتحديث وسائل النقل والتطور العلمي، فبعضها مفيد وبعضها مفيد وخطر، اضافة إلى التطور في التغيرات المناخية والعمل في هذه الظروف للمحافظة على صحة الانسان والحيوان والنبات وسلامة البيئة".
تحدث الحاج حسن خلال ورشة العمل الوطنية عن "استراتيجية الأمنين الحيوي والوقائي في حال حصول أزمة بيولوجية أو كيميائية أو نووية"، في حضور المدير العام للوزارة لويس لحود، ومشاركين من مختلف الإدارات. وتستمر الورشة حتى السبت المقبل، وسيوزع وزير الزراعة شهادات على المشاركين فيها.
وقال: "شهدنا في الاعوام الماضية على الصعيد البيولوجي ظهورا لمرض جنون البقر، فمنعنا استيراد الابقار من احدى الولايات البرازيلية التي ظهر فيها أخيرا، رغم ان المستوردين اللبنانيين لا يستوردون اللحوم الحية والمشتقات منها، اضافة إلى ظهور مرضي انفلونزا الطيور والخنازير في بعض الدول".
وتطرق ألى "ظهور مرض الرعام على الخيول في لبنان خلال 2011 – 2012، اذ قضي عليه بلا ضجة إعلامية"، مشيرا الى "انتاج اللقاحات ونقلها، اضافة الى التلوث الكيميائي والصناعي والمخلفات الصناعية ومضاعفات الزئبق، والطب النووي الذي يجب التعامل ومع مخلفاته، وعن التلوث البطيء والمزمن الذي يؤدي إلى أزمة". واعلن انه "لم نر في لبنان تسجيلاً لأزمات كبيرة رغم التلوث الكيميائي البطيء، اضافة إلى ظهور مرض "الفيتوبلازما" على اللوزيات المصنف مرضا بيولوجيا". واشار الى "خطة للقضاء عليه".
والقيت كلمات للممثل الاقليمي لمنظمة الصحة العالمية حسن البشري، وممثل المنظمة العالمية للصحة الحيوانية غازي يحيى والمدير التنفيذي لشركة GILS تيم ترافن.
من جهة اخرى، ذكّرت وزارة الزراعة انها بناء على القرار 1104/1 المتعلق باستيراد البطاطا المعدة للاستهلاك البشري، تستمر في قبول طلبات اذونات الاستيراد المسبقة لغاية 26 كانون الثاني الجاري في ديوان الوزارة.
