"Food safety is an increasingly important public health issue. Governments all over the world are intensifying
their efforts to improve food safety. These efforts are in response to an increasing number of food safety
problems and rising consumer concerns." WHO Good Manufacturing Practices (GMPs), Hazard Analysis and Critical Control Points (HACCP), and ISO 22000 are systems and recommended approaches to ensure that products meet food safety, quality and legal requirements.

But the question remains: Who guarantees and ensures conformance to those systems?

Food Safety

Food  safety  refers  to  the  conditions  and  practices that  preserve  the  quality  of  food  to  prevent
contamination  and  foodborne  illnesses.  The  Food Safety and Inspection Service (FSIS) defines a safe
food as “a  product  which  when  consumed  orally either  by  a  human  or  an  animal  does  not  cause
health risk to consumer”.


The  World  Health  Organization  announced  that food  and  waterborne  diarrheal  diseases  are leading  causes  of  illness  and  death  in  less developed  countries,  killing  approximately  2.2 million people annually, 1.9 million of whom are children.  More  than  200  known  diseases  are transmitted through food noting that all foods can become contaminated. However, higher risk foods include  red  meats,  poultry,  eggs,  dairy  products, raw sprouts, and raw fish or shellfish. Some food products  may  already  contain  bacteria  or parasites,  chemical, or physical contaminants.  On the  other  hand,  contamination  can  occur  during the  receiving,  production,  and/or  packaging
process if the food is not handled properly (Cross-contamination).

While we Lebanese were busy in our Hummus War late in 2010, where we bragged over the rights of the World's largest batch of Hummus, Lester Brown in his article “The New Geopolitics of Food" wrote:

“… As land and water become scarcer, as the Earth's temperature rises, and as world food security deteriorates, a dangerous geopolitics of food scarcity is emerging. Land grabbing, water grabbing, and buying grain directly from farmers in exporting countries are now integral parts of a global power struggle for food security…With grain stocks low and climate volatility increasing, the risks are also increasing. We are now so close to the edge that a breakdown in the food system could come at any time."
